Olivero Mario Barolo

The Story

Two little vineyards, located in the “Brunate” and in the “Fossati” areas of La Morra. They have south-east exposure, at an altitude of 350 metres above sea level. The harvest of grapes is usually done from 25th of September to 15th of October, according to the climatic conditions of each year. Aging takes place in oak barrels, 40% of which are new, for 30 months. After bottling, refinement of wine lasts for about 10 months inside our cellar.

The Taste

Barolo is a garnet red coloured wine with typical orange reflections. It combines, at nose, the spicy scents of grapes and wood, refined by elegant aromas of flowers growing over time. A full-bodied and austere wine in the mouth; its delicate scents of wood are the background to the typical hints of violet and cherry due to the extraordinary authenticity of Nebbiolo grape.

Food Pairing

Main courses of red beef such as roasts, braised and stewed; perfect matching with game. The pairing with mature and “blue” cheeses is more typical than the intriguing one with dark chocolate. Barolo is suitable for a really long ageing, in fact it tastes good up to 15 years after the vintage. The best drinking temperature is about 18°C, served in large glasses.
